According to a report from Ardent Mills LLC, there are five key trends shaping consumer purchasing decisions when it comes to food:

1. Ingredients Matter: Consumers are paying close attention to the ingredients in their food, with 85% stating that ingredients play a role in their food choices. Nearly 60% are willing to pay more for foods made with whole and less-processed ingredients.

2. Heritage is Hero: Food is seen as part of consumer identity, with 51% agreeing that food is part of their identity and 63% saying their upbringing influences what they eat. Consumers are also interested in trying new foods and flavors from different global cuisines.

3. Adding with Intent: Consumers are looking for foods that align with their dietary goals, whether it's for overall health and wellness, environmental claims, mood-boosting properties, or convenience. Seeking "good-for-you" foods is important to 80% of consumers.

4. Desire to Do Good: Many consumers believe their food choices can have a positive impact on the planet, with 53% stating that their food choices could make a difference. Sustainable and regenerative agriculture practices are important to nearly half of consumers.

5. Indulgence: Consumers still prioritize great-tasting foods, with 92% stating that taste is a key element of their dietary goals. Many consumers also enjoy indulging in rewarding and treating themselves with sweet baked goods from stores or restaurants.

Ardent Mills emphasizes that grains can play a significant role in meeting these trends, as consumers appreciate the taste, texture, and nutritional benefits that grains bring to food products. Grains, flours, and pulses are seen as positively impacting the taste and texture of food, and play an important role in the benefit claims made by grain-based food products.
